Seedpod Farm Jack-O-Waffles!

When Halloween roles around our kiddos go bananas with expectation. Costumes, decorations, the "Trick of Treat" route for the year.....there's lots to plan! I try to squeeze as much Harvest Fun into our homeschool lessons as I can. We've studied the life cycle of pumpkins, done a unit on bats and their key place on the farm, as well as a lot of math with pumpkins. How do you test whether or not a pumpkin floats? Answer- throw it in the pool! In addition to making carmel apples and carving pumpkins (that have been fished out of the pool), I try to have some fun harvest-based activities to keep our minds off of candy and costumes.

Years ago we landed on the tradition of creating "Jack-O-Waffles". This fun pumpkin (or squash) based waffle treat is fun for the whole family. It also helps to have this activity to come home to after a bit of Trick-or-Treating. Enjoy!

Seedpod Farm Jack-O-Waffles

Ingredients

  • 2c pumpkin puree

  • 2 eggs

  • 1c non-fat yogurt

  • 2c all purpose flour

  • 1T baking powder

  • 1t baking soda

  • 1/2t salt

  • 1/8t cloves

  • 1/4t each- nutmeg and ginger

  • 1t cinnamon

  • 1t vanilla

Mix pumpkin puree, yogurt, and eggs until smooth. Wisk dry ingredients together. Combine all and add vanilla. Batter will be thick. Pour into waffle iron per manufacture's instructions- approx 3/4cup mix per waffle. Keep waffles warm in the oven until all are ready. Decorate with- whipcream, berries, raisins, coconut, chocolate chips, sliced almonds- or whatever your imagination can muster. Enjoy!
